I love fries. It’s one of the best reasons I may go to a fast-food restaurant for the fries. And sweet potato fries were the rave a little bit ago but for me they still are. It’s something different to order at a restaurant other than a fast-food restaurant. They have a slight sweetness to them and with a few savory spices it will balance that sweetness. I serve them with a simple aioli but feel free to change up the spices used to make the fries and aioli. The possibilities are many.
Sweet Potato Fries
Ingredients
- 3-4 Sweet Potatoes
- Canola Oil (you can substitute melted butter if desired)
- Salt and Pepper
- 1 ½ tsp Garlic Powder
- ½ tsp Smoked Paprika
- 4 tsp Cornstarch
- ¼-1/3 cup Parmesan Cheese, grated
- Parsley, finely chopped for garnish if desired
Spicy Aioli –
- ½ cup Mayonnaise
- 1 Tbsp Lemon Juice
- 3 tsp Spicy Brown Mustard
- 1-2 Garlic cloves, minced
- 1 tsp Hot Paprika
- Salt and Pepper
Directions
- Preheat oven to 425
- In a small bowl mix together salt and pepper, garlic powder, smoked paprika and cornstarch. In a large bowl or on a parchment or foil lined baking sheet, drizzle the oil or melted butter to coat the fries. Sprinkle the fries with the spice cornstarch mixture until well coated.
- Roast the fries for about 10-15 minutes. Then flip or turn over the fries oven to cook the other side. (this will help to bake crispier fries on the outside). Bake for another 10-15 minutes until crisps but not burnt (because of the sugar content in sweet potatoes don’t burn them)
- Note: to say a little time, place the fries on a cooking rack on a baking sheet and this will cook on both sides without having to flip them.
- While the fries are baking, make the aioli sauce if using. In a small bowl combine all the ingredients and thoroughly mix together.
- Remove from the oven and immediately sprinkle with Parmesan cheese and parsley. Serve immediately with the aioli sauce on the side.
