I could eat lemon bars anytime of the year and especially when I feel like I want a little sunshine in my day. That’s what these bars remind me of, a little sunshine. These bars are filled with a little tanginess from the lemon and a big kiss of sweetness from the sugar.
I remember making these bars for tea parties with my daughter and for my friends. They are delectable. Go ahead and make some today and you’ll bring a little sunshine into your day.
Sunshine Lemon Bars
Ingredients
Crust:
- 2 ½ cups of Flour
- 2/3 cups of Powdered Sugar
- ½ tsp Salt
- 1 cup unsalted Butter, soft
- 1 tsp Vanilla
Filling:
- 3 Tbsp Lemon Zest, chopped to get lemon zest bits (about 3-4 lemons, depending on size)
- 3 cups of Sugar
- 4 Tbsp Flour
- 8 Eggs, room temperature
- 1 cup Lemon Juice, (about 4 lemons)
Directions
- Preheat the oven 350 degrees. You’ll need a 9 x13 baking dish ready (glass preferred)
- In a bowl, stir together the flour, salt and powdered sugar. Add softened butter and vanilla and mix until dough comes together and is completely combined. Press dough into baking dish, gently pressing dough evenly in the baking dish. Bake cookie dough for about 20 minutes until the dough begins to turn a light golden brown color. Remove from the oven and cool.
- In the meantime, in a bowl combine the sugar, flour and lemon zest and stir till combined. Add in the eggs, lemon juice mix well until completely and thoroughly combined.
- Pour the lemon mixture on top of the crust (it’s ok if still a little warm). Bake in the oven for about 25 minutes. They are done when the center is set and doesn’t jiggle. Remove from the oven and cool completely, for about 1 hour or more, before cutting into bars. For a suggestion, cut bars with a sharp knife and wipe clean after each cut.
- When bars are cooled, Dust with powdered sugar, if desired.
