I love crab cakes and I also love shrimp.  So I wanted to make a shrimp cake or burger and came up with this recipe during the summer.  I’ve served these shrimp cakes two different ways – over a bed of butter lettuce with cherry tomatoes, thinly sliced red onions, parsley, grilled corn off the cob and avocado with a drizzle of spicy aioli dressing or whatever else you would like to add.  These shrimp cakes also make a good ‘burger’ served on a toasted sesame seed bun or other bun that isn’t too chewy and a spicy aioli dressing or mayo with lettuce and thinly sliced tomato.  This is a fun summer, or what I like to always say, anytime, dish to make.

‘Shrimp Cakes or Burgers

Ingredients

  • 1 – 1 ½ pound of raw large Shrimp, peeled, deveined
  • 1 ½ Tbsp lemon juice
  • Salt and Pepper
  • 2 tsp seafood seasoning, such as Old Bay
  • 2 tsp Garlic, finely minced or 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 2 Tbsp Parsley, chopped
  • 1 Green Onion (Scallion) finely chopped
  • 1 Egg, slightly beaten
  • 1/3 – ½ cup Bread Crumbs, either regular or Panko, using Panko will give it a little more crunch on the outside, if desired
  • ¼ cup of Olive Oil or Canola, or more if needed

 

Aioli Sauce

  • ¼ cup Mayonnaise 
  • 1 tsp Old Bay Seafood Seasoning
  • ¼ tsp Garlic powder
  • Dash of Salt and Pepper
  • 1 Tbsp approx. of Lemon Juice
  • 1 tsp Olive Oil 
  • ¼ Smoked Paprika, if desire

 

Directions

  • Rough chop half of the shrimp into chunks.  Take the other half and mashed with a fork/spoon or put into a food processor and pulse until fine/smooth.  
  • Combine the chopped and mashed shrimp into a bowl.  Add in the lemon juice, salt and pepper, Old Bay seasoning, garlic, cilantro, green onion and mix.  Then add in the egg and breadcrumbs.  Add the paprika if desired. 
  • Divide the mixture into four mounds and form into a round burger shape, slightly thick (not too thin) and then place in the refrigerator for a few minutes until the oil is heated.  
  • Heat a large heavy duty pan (cast iron) with the oil on medium high heat.  Gently place each shrimp burger into the pan and cook for about 5-8 minutes on each side until a nice golden color.

 

Aioli Sauce

  • In a bowl, combine the mayo and all of the other ingredients and mix until fully combined.  
  • Serve the shrimp cakes on a bun, on a bed of lettuce salad with fixings or in a shrimp bowl.
