Seven Layer Dip with Ground Meat

 

 

I have made this one of my go-to appetizer dishes.  I first made it for Chris’s family reunion and then for a girls get together with Lisa and Debi.  Since then, I have made it often and everyone loves it.  It’s like having a mini taco on a chip.  Adding the ground meat makes a big difference.

Seven Layer Dip with Ground Meat

Ingredients

  • 1 lb Ground Beef or Chicken, cooked and drained
  • 1 can (15oz) Refried Beans
  • 1-2 Jalapeno Peppers, seeded, finely chopped or 
  •  1 (4oz) can Jalapeno diced peppers
  • 1 – 2 Tbsp Taco Seasonings or
  •       3 tsp Cumin
  •       3 tsp Chili Powder
  •       1/2 tsp Onion Powder
  •       2 tsp Garlic Powder
  •       1 tsp Smoked Paprika
  • Salt and Pepper
  • 3-4 Avocados, mashed or good store bought avocado dip
  • 1 Lime, juiced and zested
  • 1/2 cup Cilantro, chopped
  • 1 cup Sour Cream
  • 1/2 cup (4oz) Cream Cheese, soften
  • 2 Roma Tomatoes, diced
  • 2 Green Onions or 
  •       1/4 cup Red Onion diced
  • 2 cup Cheddar Cheese, shredded 
  • 1/3 cup Black Olives, sliced (optional)
  • Lettuce, shredded (optional)

Directions

  • On medium heat, cook the meat with the taco seasonings and salt and pepper. Let cool.
  • In a small bowl combine the refried beans and jalapeno peppers and a dash of salt and mix together. 
  • In a small bowl mashed up the avocados.  Add a dash of salt, lime juice and zest and about a tablespoon or more of cilantro.  Mix and set aside.
  • In a small bowl add the sour cream and cream cheese and mix until combined.  Set aside.
  • Cut up the tomatoes, green onions and shred the cheese.
  • Assemble – in a pie dish or other favorite dish layer the dip by starting with
  • Refried beans on the bottom, then ground beef on top, spoon and smooth the avocado mixture over the meat, then the sour cream mixture on top, sprinkle cheese on top, then sprinkle with lettuce (if using) then tomatoes, green or red onions, black olives (if using).
  • Cover with plastic wrap and refrigerate until ready to serve.  Serve with your favorite tortilla chips.
