One Pot Hamburger Helper

 

 

I grew up with hamburger helper, tuna helper and other convenient packaged dinners.  It was back in the 70’s and 80’s and my mom worked a full-time job.  It got dinner on the table a lot quicker and it was good.  Now, I like cooking, as much as I can, from scratch.  So here we are.  I wanted to recreate a childhood memory and make a hamburger helper that will be familiar, homemade and just as delicious if  not  more so.  I hope you enjoy making it as well.

One Pot Hamburger Helper

Ingredients

  • 1 lb Ground Beef
  • Olive Oil
  • Salt / Pepper
  • 1/2 Onion, diced
  • 2 – 3 cloves Garlic, chopped or minced
  • 2 strips Bacon, cooked and chopped
  • 2 Tbsp Tomato Paste
  • 1 tsp Ground Mustard
  • 2 tsp Smoked Paprika
  • 2 tsp Oregano
  • 1 1/4 cup Macaroni, uncooked
  • 3 – 4 cups Beef Broth
  • 2 – 3 cups Grated Cheddar Cheese
  • Parsley, chopped, for garnish

Directions

  • In a large Dutch oven pot, drizzle a little olive oil and sauté the onions.
  • Add the ground beef, breaking it up, sprinkle with salt and pepper and cook until the meat is almost cooked through.  Add the garlic and continue to cook.  Add the bacon, tomato paste, ground mustard, smoked paprika and oregano.  Stir and mix all together.  Cook for a minute or two to cook the tomato paste.
  • Add 3 cups of beef broth. Stir.  Add in the macaroni and stir.  Bring the mixture to a boil and then reduce to a low simmer.  Cook for about 20 – 30 minutes until the pasta is tender.  Taste and add additional salt or spices if needed.  Add additional beef broth if desired.  
  • Add 2 1/2 cups of cheese and stir into the meat mixture.  Continue to cook until the cheese has melted.
  • Garnish with remaining cheese and parsley.
