Rice is a perfect compliment to almost any dish.  I wanted to pair this with quinoa because I really like them both together and quinoa is also good for you.  A grain that has some protein, how can you go wrong.  I love the combination of rice and quinoa.  A great substitute is adding orzo with the rice.  You would cook it similar to rice-a-roni (sautéing the orzo in butter before adding in the rice and broth or water)

Lemon just makes everything taste good with its brightness of flavor.  It reminds me of waking up food sometimes.

Lemon Rice and Quinoa

Ingredients

  • 1 ¼ cup Rice, cooked.  Cook according to package directions.  (I prefer to use chicken or vegetable broth but water is perfectly fine as well.  
  • ½ cup Quinoa, cooked.  Cook according to package directions.
  • Salt
  • ½ medium Sweet Onion, chopped
  • 3-4 Garlic cloves, minced
  • 1-2 Lemons juiced and zest
  • Handful Parsley, chopped
  • 2 Tbsp Dill, dried or 4 Tbsp fresh Dill

 

Directions

  • Add rice and broth or water to a saucepan and bring to a boil.  Add salt.  Let it cook for a minute and turn down to a simmer.  Cook for about 20 minutes or longer until light and fluffy.
  • Add quinoa and water to a saucepan and bring to a boil.  Add salt.  Let it cook for a minute  and turn down to a simmer.  Cook for about 10 minutes or more until light and fluffy. 
  • Combine the rice and quinoa together and keep warm.
  • While rice and quinoa is cooking, add onions to a sauté pan on medium – high and cook until translucent.  Add in the garlic and cook until aromatic.  Add onion mixture to the rice and quinoa and stir.  Add in the lemon juice and zest stir until all mixed together.  
  • In a small bowl, mix together the dill and parsley and sprinkle over the rice quinoa, and maybe a few slices of lemon on the side.
