Fried Rice with Spam and Pineapple

 

 

Making fried rice is an easy quick dinner to make and one of my go-to dinners.  Fried rice is full of flavor, veggies and is just delicious. I usually add in chicken or pork.  I wanted to change up my traditional fried rice recipe and add something a little different.  By the way,  I truly did grow up having Spam for breakfast, dinner and we always took some along when we went camping.  Now don’t knock spam until you try it.  It’s come a long way since I had it.  Spam has that meaty salty flavor while pineapple has just enough sweetness to balance the meal.  All of the other flavors are able to still shine as well.  And of course, toasted sesame seeds to top it all off.

Fried Rice with Spam and Pineapple

Ingredients

  • About 3 cups of cooked Long Grain Rice
  •   Option – 4 cups of Balsamic Brown Rice
  • 2 Eggs 
  • 1 can Spam, cut into chunks
  • 1/3 cup Onion, chopped
  • 3 Green Onions, chopped
  • 3 Carrots, diced
  • ½ Red Pepper 
  • 3 Garlic cloves, minced
  • 1 tsp Ginger, minced
  • 1 cup Pineapple, chopped
  • 3 Tbsp or more Soy Sauce
  • 2 tsp or more Toasted Sesame Seed Oil, be careful, sesame seed oil has a strong flavor
  • Salt and Pepper
  • Optional or to Garnish
  • 2 Green Onions chopped 
  • Parsley, chopped
  • Basil, cut in strips
  • A few mint leaves, chopped
  • ½ cup Peas
  • Toasted Sesame Seeds

Directions

  • Cook the rice.  Prep all of the veggies, pineapple and cut up the spam.
  • In a large sauté pan, on medium heat add a little olive oil.  Add the onions, carrots and red pepper.  Cook until just tender.  Remove.  Add in the spam and cook until cooked through and just a little brown on the outside.  *Remember, the spam is already cooked, you are just heating it up and frying it a little bit for more flavor.  Add in the onions, pepper, carrots, garlic, green onions and ginger and peas, if using.  Cook until aromatic.  Move the food to one side or make room in the middle of the pan and add the eggs, stir and scramble the eggs until cooked.  Add the soy sauce and toasted sesame seed oil and mix in with all of the ingredients.     
  • Add in the rice and fold in the veggies, eggs and spam.  Add the pineapple and heat up until warm.  Add in more soy and toasted sesame seed oil if needed.  Taste before adding in any salt (you may or may not need to add)  
  • Serve in bowls and garnish with green onions, basil and mint and toasted sesame seeds.
