Corn Dog Muffins

 

 

Having a corn dog is traditional for carnivals, fairs and at other events.  And I love having one.  They always seem to do it right at these events.  I thought this recipe would be great for my grandkids.   So, when I was watching my grandkids I made this recipe with them.  They loved them so this recipe is grandkid approved.  Give this recipe a try.  No frying involved to get that good ole corn dog taste.

Corn Dog Muffins

Ingredients

  • 1 cup Flour
  • 1 cup Cornmeal
  • 1 Tbsp Sugar
  • 1 Tbsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • 2 Eggs
  • 1/4 cup Butter melted
  • 2 Tbsp Canola Oil
  • 1 1/2 cups Shredded Cheese
  • 6-8 Hot Dogs, rough chop

Directions

  • Preheat oven to 375
  • In a large bowl whisk the dry ingredients (flour, corn meal, sugar, baking flour and salt).  In a small bowl mix the wet ingredients (milk, eggs, butter and canola oil).    Add the wet ingredients into the dry and stir until just combined.  Try not to over mix.  Add in the cheese
  • Grease a muffin tin.  Spoon mixture into the muffin tin.  
  • Bake for about 15-20 minutes.  Use a toothpick to check for doneness.  
  • Serve with mustard, brown mustard or ketchup or another favorite sauce.

Note:  You can add diced jalapeno peppers, pepper jack cheese or red pepper flakes to add a little spice.
