Pork is another meat that is easy to cook and goes well with a lot of side dishes. I find that like boneless chicken, pork stays juicy with a dusting of flour, searing the meat and cooking on low. The pork is tender and not dried out. The simple citrus sauce brightens up the pork.
A favorite side dish because you can’t go wrong with potatoes. If using white or gold potatoes leave the skin on for added texture and fiber.
Boneless Pork Chops with Orange & Garlic Sauce and Garlic Mashed Potatoes with Broccoli
Ingredients
- 4 Boneless Pork Loin Chops
- Salt and Pepper
- ¼ cup Flour
- ½ tsp Hot Paprika
- 1 tsp Garlic Powder
- ½ tsp Ginger
- ½ tsp Smoked Paprika
- Olive Oil
Sauce:
- 1 ¼ cup Chicken Broth
- 3 Tbsp Butter
- 1 Orange Juiced and Zest
- 2 Garlic Cloves minced
- 1 Tbsp White Vinegar
- ½ tsp Rosemary, mince or dried
- Red Pepper Flakes
- 1 Tbsp Parsley, chopped (garnish)
- Make a slurry, if necessary, to thicken the sauce (cornstarch and broth or water)
Garlic Mashed Potatoes with Broccoli:
- 2 ½ pounds Potatoes, white or gold, chopped in small chunks
- Salt and Pepper
- 4 Tbls Butter
- 4 Garlic cloves, minced
- ¼ cup Greek Yogurt or Sour Cream
- Milk, if desired for creamier potatoes
- 2 cups of Broccoli, rough chop and cooked
- ¼ cup Parmesan Cheese, grated
- Dash of Paprika, garnish topping
Directions
- In a shallow bowl or plate add the flour, paprikas, garlic powder, ginger and salt and pepper. Using a whisk or fork, mix the dry ingredients together. Pat dry the pork.
- In a saute pan, on medium high heat, drizzle olive oil in the pan. Dredge the pork chops in the flour mixture. Sear one side of the pork chop, about 5 minutes, and then the other side, about 3 minutes and place a lid over the pan and reduce the heat to medium low and continue to cook the pork until done in the middle. Remove the pork and place on a plate.
- In the same pan, on medium low heat, include any pan juices add the chicken broth, orange juice and zest, garlic, butter and vinegar, rosemary and red pepper flakes. Bring to a low boil and cook until slightly reduced. If needed or desired, make a little slurry and add a little at a time until your desired thickness. Add back in the pork and spoon sauce over the pork. On simmer, continue to cook the pork until heated through.
- Garnish with parsley and serve with your favorite side – Garlic Mashed Potatoes and Broccoli
Garlic Mashed Potatoes with Broccoli:
- In a large pot add the water, potatoes and salt. Bring to a boil and then reduce to medium and cook until potatoes are tender and a fork goes in easily. Drain. Add the potatoes back into the warm pot and add the butter, yogurt or sour cream and salt and pepper. Mash the potatoes to a slight chunky consistency. Add milk, if needed, a little at a time.
- While the potatoes are cooking, microwave the broccoli with a little bit of water. Cook until tender and can pierce with a fork. Drain
- Stir the broccoli and parmesan cheese into the potatoes. Cover with a lid to keep warm until ready to serve.
