If you like apple fritter donuts, you’ll love this cake. I don’t do a lot of frying, so this cake recipe is just perfect. The sweet apple pieces and subtle cinnamon spice throughout gives the cake its wonderful scrumptious flavor.
Apple Fritter Cake
Ingredients
- 3/4 cup Sugar
- 1/2 cup Butter, room temperature
- 2 tsp Vanilla
- 2 Eggs, room temperature
- 1 1/2 cup Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Buttermilk
- 1 3/4 – 2 cups Apples, small diced
Apples:
- 3 Tbsp Sugar
- 1 – 2 tsp Cinnamon
- 1/4 tsp Nutmeg
Cinnamon Sugar:
- 1/2 – 2/3 cup Brown Sugar
- 1 Tbsp Cinnamon
Glaze:
- 1/2 cup Powdered Sugar
- 2 tsp or more Milk or Cream
Directions
- Preheat the oven to 375 degrees.
- Grease a 9×5 loaf pan or small Bundt Pan
- In a small bowl make the cinnamon sugar by adding the brown sugar and cinnamon and whisk together.
- In a large bowl add the diced apples and cinnamon, sugar and nutmeg and stir together until the apples are coated.
- In a bowl add the flour, salt, baking powder and baking soda and whisk together until all combined.
- In a mixer, cream the butter until fluffy and then add the sugar. Continue to mix until all combined and fluffy. Add the vanilla and eggs, one at a time, and beat until all mixed together and fluffy.
- Alternately add in the flour and buttermilk, ending with flour and mix until incorporated.
- Be sure not to overmix the batter at this point.
- In the grease pan add half the batter and smooth out until evenly distributed in the pan. Add half the apples and slightly press the apples into the batter. Sprinkle some of the cinnamon sugar on top. Add the remaining batter and smooth out on top. Add the remaining apples and gently press into the batter. Spring more of the cinnamon sugar on top.
- While the cake is baking make the icing. Add the powdered sugar and cream and mix until you get the desired consistency.
- Bake for 45-50 minutes until done. Let cool before drizzling the icing on top.
Note:
If using a small bundt pan you can make it two different ways. Follow the recipe as above and you’ll have an upside down bundt cake. OR follow the above directions in reverse when adding the batter, apples and cinnamon sugar to the pan.
To the bundt pan, add the cinnamon sugar, apples and batter. Add the apples cinnamon sugar and batter. Bake and remove cake as normal when baked in a bundt pan.
