Apple Cake, A little Fancy

Sometimes you need a cake that is just simply delicious.  This is it.. It’s fancy, delicate and just enough sweetness without a lot of fuss.  What makes this so delicious and versatile?  Maybe it’s the subtle tartness of the apples, light fluffy cake and topped with powdered sugar.  This cake is perfect any time of the day, whether for coffee, a sit down get together with girlfriends or a nice dinner with friends.

Apple Cake

Ingredients

  • 1 cup of All Purpose Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup unsalted Butter, melted
  • 2/3 cup Sugar + about 1 tbsp to sprinkle on top before baking
  • 2 large eggs, room temperature
  • 1 tsp Vanilla
  • 2 large Apples, peeled and cut into small chunks
  •      (like Braeburn, Granny Smith, Gala or other)
  • 1 Tbsp Lemon juice, with ½ tsp lemon zest 
  • Powdered Sugar for Dusting (optional)

 

Directions

  • Preheat the oven to 375 degrees.  Prepare a 9 inch cake pan.  Cut a circle of parchment paper to fit the bottom of the cake pan and grease sides and bottom of paper.  Or use a 9 inch springform pan and grease as well.  
  • In a small bowl, whisk together flour, baking powder and salt
  • In a small bowl combine the apples  and lemon juice and set aside
  • In a large bowl, combine sugar, eggs and vanilla.  With a hand mixer mix till fully combined
  • Mix in ½ of the flour into the egg mixture, followed by half the melted butter.  Repeat with the rest of the flour followed by the butter till  all ingredients have been incorporated.   
  • Add apples and fold into the batter.  Pour the batter into the prepared pan and smooth into an even layer.  Gently tap the cake pan to pop any air bubbles.    
  • Bake for about 40- 45 minutes or until a knife or toothpick inserted in the center comes out clean
  • Cool pan on a rack for about 15-20 minutes.  Gently  run a knife around the edge to loosen the cake from the pan.  Be careful, with a plate over the cake, gently turn cake over onto a plate to cool completely or release cake from the spring form and cool completely.  
  • Dust cake with powdered sugar.
