Anytime Granola

I love making this granola because it is so good anytime.  I’ve made it for road trips, to snack on in the car riding to my kids sports games, lunch snacks or that quick energy snack in the middle of the day.

Perfect for on the go, snacking

Ingredients

  • 3 cups of Old Fashioned Oats (not quick oats)
  • 1 cup of slivered Almonds
  • 1 cup of Pecans (rough chop)
  • ½ cup Walnuts (rough chop)
  • (You can Substitute one of the nuts for Hazelnuts, chopped)
  • 1/3 cup Flax Seeds
  • 1 cup of shredded Coconut

Fruit:  one or two or none if you prefer

  • ¾ cup of Cranberries
  • ¾ cup of chopped dried Apricots
  • ½ cup of Raisins 

Seeds:  Pick one or another if you prefer

  • ½ cup Pumpkin Seeds
  • ½ cup Sunflower Seeds

Make adjustments to the mixture to suit your preference and amount of dry ingredients 

  • 3 Tbls of Butter
  • ¼ cup Brown Sugar
  • 2/3 cup Honey
  • ¼ cup Corn Syrup
  • ½ tsp Vanilla
  • 1 tsp Cinnamon
  • 1 tsp Salt

Directions

Preheat the oven to 350.  In a 9 x 13 baking sheet, line with parchment paper.

Combine Oats, Almonds, Pecans and Walnuts and Pumpkin Seeds and spread out evenly in the baking sheet.  Bake for about 15 minutes, turning occasionally half way through, til lightly brown and toasted.   Mix in flax seeds and shredded coconut and bake for another 10 -15 minutes.  Let cool.  Add the dry ingredients into a big bowl.

In the meantime, combine the butter and brown sugar in a medium saucepan. Heat til butter has melted and brown sugar begins to dissolve.  Add in honey, corn syrup, vanilla, cinnamon and salt.  Bring mixture to a small boil and cook for about 3-5 minutes on medium heat til all the ingredients have dissolved and it’s a clear liquid.  

Pour sugar sauce over the toasted oat mixture and mix until all combined.  Grease or butter fingers (to prevent sticking to your fingers) and press mixture in the 9 x 13 baking sheet.  Bake for another 15-20 minutes til set and browns a little more.  Remove from the oven and let cool for about 2 – 3 hours.  After granola cools break into pieces or cut into squares and store in a tight container.  If it crumbles, no worries, it is still delicious.  

Granola is a great snack anytime of the day – for breakfast, lunch, desert, over yogurt, ice-cream, oatmeal, cobbler, baked fruit.  You choose.
